METHOD 1. Whisk the eggs in a large mixing bowl. 2. After that add in the greek yogurt, sugar, oat bran and stir well. ( The mixture should be thick, but soupy and pourable. If necessary, you can add some milk or water to loosen. ) 3. Heat a frying pan over a medium heat. Add a little coconut oil or butter to the pan then fry the mixture in batches. The pancakes should be ready to ip when little bubbles start to form in the centre. 4. To serve, stack the pancakes up on a plate and top with some sugar powder, strawberries and blueberries.
