Christmas Tree Cupcake

INGREDIENT
CUPCAKE
1 2/3 cups all-purpose our
2 tsp cocoa powder
1 cup granulated sugar
1/4 tsp baking soda
1 tsp baking powder
1/4 tsp salt
170g unsalted butter
3 eggs room temperature
2 tbsp vanilla extract
3/4 cup buttermilk
red food coloring


CREAM TOPPING
400g whipping cream
6 tbsp sugar
2 tsp matcha powder
Strawberries
edible sugar sprinkles


METHOD CUPCAKE
1. Preheat oven to 180 °C. Place cupcake papers in a cupcake pan.
2. In a large bowl, sift the dry ingredients together (including the sugar). Give it a whisk to combine.
3.Cut the butter into small pieces then add to the dry mixture then mix on low until a sandy mixture forms.
4. In another bowl, whisk together the eggs, buttermilk, vanilla, and red food coloring.
5. Slowly add the wet ingredients to the dry ingredients while mixing on low. Mix until combined.
6. Distribute the batter evenly into cupcake papers.
7. Bake at 160 °C for 15-20 minutes or until brownish.


CREAM TOPPING
1. For frosting, add heavy cream into a medium bowl. Sift in the matcha powder and beat the whipping cream
until thicken and uy.
2. Transfer the matcha whipped cream to a piping bag.
3. In the middle of each cupcake place one strawberry, then pipe the whipped cream all around the strawberry
into a christmas tree shape until you cover the whole strawberry.
4. Top some brightly coloured sprinkles in to the cupcakes to resemble christmas baubles.
