METHOD 1. Preheat oven to 180°C. 2. In a medium mixing bowl, mash the bananas. 3. Combine rolled oat and baking powder, set aside. 4. Beat egg lightly in a large bowl. Whisk in milk, honey and vanilla extract. 5. Stir in the mashed bananas, rolled oat mixture, dark chocolate chips and mixed nuts until well combined. 6. Scoop the mixture into the aluminium foil container or cupcake cup. 7. Bake at 170°C for 15-20 minutes or until the tops of the oatmeal cake are golden brown.
